Strawberry Muffins

Time for another Pinterest Review. I pinned this recipe a long time ago and I have been wanting to try it for forever and tonight it finally felt like the right time. Muffins with no flour! Incredible idea.

Before I start I just want to say how proud I am of my muffin tin! The recipe recommended using foil cupcake liners... I decided to make my own for free :) I bet a lot of people do this... but I felt pretty clever. Honestly though, it is a lot harder than it seems. 



I preheat my oven to 350 but the recommendation on the recipe was 400.



Combine the following ingredients and blend in a blender:

1 cup low fat plain greek yogurt
2 1/2 cups oats (not the quick oats)
2 eggs
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 cup sweetener of your choice --> I chose brown sugar because that is what I already had at home




Combine this concoction with: 

1 1/2 cup strawberries (diced)

Then poor into your muffin pan!

How revolutionary! 

Easiness: 9, really simple recipe, unless you make your own tins...
Taste: 7, i actually really enjoyed it! I give it a 7 though because if you are expecting a dessert then you probably won't like it! Definitely more of a breakfast type treat :)
Time: 8, the only thing that was time consuming was chopping up the strawberries
Nutritional status: 8, when compared to the average muffin, this muffin will treat your body a lot better than the average. The only ingredient that is not the greatest is the sugar, but my philosophy is everything in moderation! So eat up!

I am so excited to see Darin tonight... he's only been gone since Sunday but I'm still allowed to be excited. I hope he enjoys the muffins as much as I did... honestly though, they probably won't be sugary enough for him! That boy has a sweet tooth.

    1. Yeah they were really good... but like a healthy good. Like I don't feel guilty eating a ton of them haha
