I loved these cookies. I will tell you right now that they were not husband approved, but none of my desserts are approved by him. He'd rather eat Swedish fish or other yucky candy, so one of these days I hope he'll come around...
They are a little bit on the crumbly side but I think this is because I did not let the dough cool in the fridge for an hour.
Ingredients:
1 large egg
4 tablespoons date puree
1/2 cup coconut oil
1 1/2 cups oat flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 cup chocolate chips
Instructions:
Combine vanilla extract, egg, and date puree in a bowl. Then let melted coconut oil cool for a little bit before adding it to the bowl. Once added, mix everything together.
Add in oat flour, baking soda, and cinnamon. Stir until mixed well and then add in chocolate chips.
Chill the dough for an hour int he fridge. Don't skip this step (I made the mistake of doing that haha)
Preheat oven to 350 and line a pan with parchment paper. Scoop cookie dough into tight tight balls.
Bake for 8-10 minutes.
Allow to cool first before moving them so they don't fall apart!
