Greek Garbanzo Bean Salad

I am always asking my husband for feedback on the recipes that I try. Every time I ask him what his favorite thing is that I make he says this Greek Garbanzo Bean Salad. Yes, MY husband that loves burgers, steak & potatoes, Jack in the Box .99 cent tacos, etc. He doesn't care if something is healthy or fresh he just likes to be full and for it to taste yummy. He can't get enough of this stuff. It is so easy to put together and takes hardly any time at all. It is perfect for a side dish at a summer BBQ or for a main course on a busy weeknight. We typically don't eat very large meals for dinner so this is perfect for us as a main dish and I promise it will fill you up!


3 Cans of Garbanzo Beans
1 English Cucumber Chopped
2 Cups of Grape Tomatoes Cut
1/2 Red Onion Finely Chopped
1 Red Bell Pepper Chopped
2 Small Cans of Sliced Black Olives (approx 4 oz)
1/2 cup Olive Oil
1/4 Cup Lemon Juice
Sprinkle of Dried Oregano
6 Ounces of Feta Cheese


Combine all ingredients together in a large bowl and mix thoroughly. You can serve at room temperature or stick in the fridge for 20 minutes to serve it cool. It makes four rather generous servings.

That's it folks. A healthy weeknight meal and all it takes is a knife and some time to chop away!
